I have been going out with her for 8 months. - In this sentence it means that dating is ongoing even after 8 months, the action is continous even after the given period.
I have gone out with her for 8 months - In this sentence dating is done after 8 months and they did go out on a date after 8 months - the action is past

Your explanation is perfect! I just wanted to explain them in Korean.
- 현재완료: 'I have 과거분사'는 완료, 경험, 결과, 계속의 뜻이 있습니다. 여기서 I have gone out with her for 8 months는 '나는 그녀와 8개월 동안 사귀어 왔다'라는 '계속'의 뜻을 가지고 있습니다. (참고로 '계속'의 뜻일 때 주로 for나 since가 함께 쓰입니다.)
- 현재완료 진행: 'I have been 동사ing'는 과거부터 지금 현재까지 계속 진행됐다는 뜻을 가진 것으로 현재완료의 '계속'을 좀 더 강조한 것이라 할 수 있습니다. 뜻이 다른 것이 아니라 현재완료 진행이 계속의 의미를 좀 더 강조한 것이라고 보시면 될 것 같습니다. -

Well the first sentece is Present perfect. So you are dating someone for 8 months. < I have been living in Rio de Janeiro for 20 years.> I still Live in Rio.
The second you did it. But you don't do it anymore. < I have lived in Rio for 20 years. > I lived in Rio and now I live in an other place.
